September is a harvest month. Towards the end of September Fall begins. After a six weeks of summer break, kids get back to school. Sleep overs and family get-togethers are all part of the September month before grown children leave home for higher studies. How about heralding the Fall and saying goodbye to the warm summer months with a few simple September recipes that are easy to make.
Fall Inspired Apple Drink
- Apple of your choice – 3 , diced
- Apple cider – 2 cups
- Caramel vodka – 1/2 cup
- Green apple vodka – 1/2 cup
- Cinnamon – 1 stick
- Club Soda – 1 cup
In a large pitcher, add the diced apples, apple cider, cinnamon stick, apple and caramel vodka. Stir well.
Refrigerate the mixture over night or for 8 hours.
Before serving add the club soda into the above mixture.
Serve in wine glasses along with the diced apples.
Chicken Spring Vegetable Casserole
- Mushrooms – Sliced, 8 oz
- Carrots – 2 medium ones, peeled and sliced
- Asparagus – 1 1/2 cups, i/2 inch pieces
- Onion – 1 finely chopped
- potato – 1 peeled and cut into 1/2 inch cubes
- Fresh parsley – 3 tbsp.
- Thyme leaves – 1 tsp
- Cooked chicken – 4 cups shredded
- All-purpose flour – 1/4 cup
- Chicken broth – 2 1/4 cup
- Groud black pepper -1/2 tsp
- Butter – 6 tbsp
Heat oven to 400 Degree F
In a heavy bottom pan, melt 2 tbsp butter and add mushrooms. Stir occasionally until they are browned. Remove it from the pan and keep it aside.
To the pan add 2 tbsp. of butter, the onion and carrots. Sauté it till the vegies are cooked. Remove it and transfer it to bowl containing the mushrooms. Add the flour and stir for a couple of minutes till it becomes brown.
To this add the chicken broth and milk and whisk quickly so lumps are formed. Cook for 5 minutes. And then add the cubed potatoes and allow it to cook well in this mixture.
When the potato is well cooked. Add the chicken and asparagus, the herbs, salt and pepper. Mix well and allow it to cook for a 5 minutes more.
Transfer the veggies into a baking dish. To this add the chicken mixture. Back for 12 to 15 minutes.
Tarte Tatin, An Apple Cranberry Dessert
One of the favorite fruits of Fall is the apple. You can preserve apples and also relish the taste of this fruit in various apple recipes. It can be paired well with other fruits too.
- Sugar – 1/2 cup
- Butter – 2 tbsp
- Gala apples – 5 , cut into wedges
- Cranberries – 1 cup
- Heavy Cream – 1/2 cup
- Greek Yogurt – 1/2 cup
- Ready to use pie crust – 1 refrigerated
Pre-heat the oven to 450 Degree F.
In an oven proof skillet, melt butter and sugar, stirring it regularly till it caramelizes.
Remove the skillet from the stove and arrange the apples wedges in the skillet and sprinkle the cranberries. Bake for 25 minutes or till the apples become tender. Cool it for half an hour.
Meanwhile, unroll the pie crust, prick it all over with a fork and bake for 8 minutes. Beat the heavy cream in a bowl and fold in yogurt and refrigerate.
Now plate the pastry on a serving plate. Top it with the caramelized apples and cranberries. Serve warm with yogurt cream.
