Reddish sweet and succulent pulpy berries known as strawberries are an excellent source of vitamin C. These can be eaten raw, grilled, dipped in cream or chocolate. Strawberries are can baked in cakes, used in smoothies and pies. It’s always better to use fresh strawberries in your cooking. However, if you want to try out a strawberry recipe when this fruit is not in season, you can use frozen strawberries.

Strawberry & Banana Smoothie

Ingredients

  • Strawberries washed and cleaned – 250gm
  • Banana chopped – 2
  • Milk – 750 ml
  • Yoghurt – 250 gm

Method

In a blender, add all the ingredients and blend until smooth.

Transfer the contents into three serving glass and serve immediately.

Strawberry Salad With Cheese And Croutons

Ingredients

  • Egg – 1
  • Full Fat milk – 2 tbsp.
  • Strawberries sliced – 1 1/2 cups
  • Black pepper – 1/4 tsp
  • Kosher Salt – 1/2 tsp
  • Breadcrumbs – 1/2 cup
  • Vegetable oil – 1/4 cup
  • All-purpose flour – 1/3 cup
  • Cheese logs – 2
  • Baby greens – 5 ounces
  • Cucumber – 1 ; peeled, de-seeded and cut into 1/2 inch slices
  • Red onion – 1/4 finely sliced

Method

Cut the cheese log into four rounds. Freeze the cheese for 20 minutes.

In a bowl whisk together the egg, and milk.

In another bowl mix together the crumbs, salt and pepper.

Roll the cheese in the flour, now dip the cheese in the egg and milk mixture. Coat it with the bread crumbs.

Now place it in the chill compartment of the refrigerator.

Heat oil in a skillet over medium heat. Gently tip the coated cheese into the hot oil and fry till it becomes golden brown.

To serve, in a platter arrange the salad greens, top it with cucumber, onions and goat cheese croutons.

Garnish with dill sprigs. Drizzle with vinaigrette of your choice.

Strawberry-Poppy Seed Vinaigrette

Ingredients

  • Strawberries quartered – 1 cup
  • Granulated sugar – 2 tbsp.
  • White wine vinegar – 5 tbsp.
  • Kosher salt – 1 tsp
  • Black pepper – 1/4 tsp
  • Extra-virgin olive oil – 1/3 cup
  • Poppy seeds – 1 tbsp.

Method

Add all the ingredients except oil and poppy seeds to a blender. Allow the strawberries to soak in the mixture for 15-20 minutes.

Blend the mixture to make a smooth paste.

Add the poppy seed and pulse the blender for a couple for seconds.

Transfer the mixture to an air-tight container. It can stay fresh for a week.
