One-Bowl Autumn Chicken Pot Pie Recipe

One-bowl meals is one of the greatest pleasures of life after a tiring day at work. There is nothing like curling up on the couch in front of the television with a bowl of something warm and delicious. From salads to steaming soups to chicken pot pie, one-bowl meals are pretty easy to make and above all a healthy alternative to ordering for a box of pizza.

Chicken Chili With Sweet Corn With Buttery Cheddar Biscuit Crust

Ingredients

  • Chicken breast – 2 large ones
  • Onion – 1 coarsely chopped
  • Jalapeno – 1 halved and seeded
  • Garlic – 2 whole cloves
  • Parsley leaves – 1/2 cup
  • Honey – 1 tbsp.
  • Butter – 4 tbsp.
  • Flour –  8 tbsp.
  • Chicken stock – 2 cups
  • Corn Kernels – 2 cup frozen and thawed
  • Buttermilk – 2 tbsp.
  • Cheddar cheese biscuits – 1/4 cup grated for garnishing
  • Olive oil, salt and pepper as per your taste

Method

Preheat the oven at 400 degree F.

Line two baking sheets with foil

Wrap cheddar biscuit crusts in a plastic bag and put them in the fridge while you make the chicken.

Place the chicken breasts on one of the baking trays and drizzle with olive oil. Sprinkle salt and freshly ground pepper as per your taste.

In a bowl, toss together the chopped onion, jalapeno, pepper and garlic cloves along with a drizzle of olive oil, salt and pepper. This is the salsa mixture.Arrange this on the side of the chicken in same baking tray and roast both for 40 minutes.

Now remove the chicken and slice it into small bite-size chunks. In a blender, coarsely grind the salsa mixture along with the fresh parsley and honey.

Prepare the base for the pot pie.

Heat a medium-sized pot over medium flame. Add butter, once its melted sprinkle the flour and stir for a minute or two to remove the raw taster. Add the chicken stock and whisk quickly to avoid lumps from forming. Allow it to thicken and remove from the heat.  Add the salsa mixture, diced chicken, and corn. Mix well. Check the seasoning at this point.

To bake the pot pies

Reduce the temperature to 375 Degree F. Ladle the mixture into oven proof individual bowls. Top each one with cheddar biscuit crust. Brush the biscuit crust with buttermilk.  Bake for 5-6 minutes or until golden.
