Blueberry is one of the healthiest food. Though it’s not harvested all year around. Preserved blueberries are available in the supermarkets. Else you can freeze blueberries yourself during the warm sunny season when its harvested. The frozen or canned blueberries also retain their nutrients and can be used in your recipes.
Healthy Breakfast Smoothie – Blueberry and Greek Yogurt
Smoothies are a great way to start your day. You can use either fresh or frozen berries to make a delicious blueberry smoothie.
- Blueberries – 1 cup
- Vanilla extract (Optional) – 1/4 teaspoon
- cinnamon powder – A pinch
- Greek yogurt – 1/2 cup
- Orange juice – 1/4 cup
- Sugar/honey – as per your taste
- Ice cubes – 3
In a blender put all the above ingredients other than ice cubes, and blend well into a smooth paste for about two to three minutes.
Add ice and run the blender at high speed for a minute more.
Transfer into a glass and top it with blueberries if you like to munch on these juicy berries.
- If you want to have very thick smoothie add less ice cubes.
- Regular yogurt is not recommended because smoothie will become super watery.
Blueberry Chicken Walnut Salad
It’s a healthy salad, that is light on your tummy and perfect for any season. You can even carry it to your office as lunch.
- Salad greens – 10 ounce
- blueberries – 1 box
- Apple – peeled and cubed
- Cooked Chicken Shredded or cubed – 1 cup
- Walnuts – 1/4 cup
- Feta Cheese – 1/4 cup crumbled
- Vinaigrette salad dressing – 1/2 cup
In a large salad bowl, toss the salad greens, walnuts, blueberries, chicken and salad dressing. Top it with feta cheese.
Cover with cling film and chill it for 10 minutes before serving.
- Eggs – 2
- Salt – 1 tsp
- Baking powder – 4 tsp
- blueberries – 1 cup
- Walnuts – 1/2 cup
- All-purpose flour – 3 cups
- Olive oil/vegetable oil – 3 tbsp.
- Milk – 1 cup
- Sugar – 1 cup
Beat the eggs and sugar well. To this add milk and oil and mix well.
Sift flour, salt and baking powder a couple of times. Gently fold this with the wet ingredient. Combine will.
Add the blueberries and crushed walnuts to this batter.
Pour this into a greased loaf pan. Bake it at 350 degrees F for 40 minutes to one hour.
Cool it in the pan and then turn it out of the pan while its still warm.
