2 Halloween Appetizers For The Scary Fete
Halloween Lizard Eyes
- Eggs hard boiled and shelled – 12
- Sweet pickle – 1 tbsp
- Mayonnaise – 1 tbsp
- Salt – 1 pinch
- Yellow Mustard paste – 1 tbsp
- Green food coloring – 2 drops
- Sliced black olives – 1 can
Slice the egg in half lengthwise.
Remove the yolk and place them in a mixing bowl. Use a fork to mash the egg yolks. Mix the remaining ingredients and make a thick paste.
Spoon this filling into the egg whites. Use a spoon to level the filling. Place an olive slice on each yolk mixture to resemble the center of the eye.
Place them on the serving tray and chill till its time to serve.
Mummy Meat Loaves
- Boiled yellow potatoes – 3/4 pounds
- Eggs – 2
- Ketchup – 2 tbsp.
- Worcestershire sauce – 2 tsp
- Plain bread crumbs – 1/2 cup
- garlic -2 cloves
- Carrot – 1
- Ground beef – 3/4 lb
- Ground pork – 1/2 lb
- Cherry tomatoes – 12
- Low fat sour cream – 3/4 cup
- peas – 1 cup
- Salt and pepper to taste
Heat the oven to 375-degree F and line the muffin tin with foil liners.
In a mixing bowl, combine eggs, Worcestershire, ketchup, salt and pepper and beat well. Now stir in the bread crumbs. Add carrot and garlic and mix well.
Stir in the beef and pork and mix well to combine.
Divide the meat mixture among the muffin mold.
Place a tomato in the center of the meat mixture.
Bake for 15 to 17 minutes.
Mash the potato with sour cream and salt till it’s very smooth. Transfer it into a pastry bag and fit it with a 1/2 inc ribbon tip.
Pipe the potatoes back and forth over each meat pies to resemble a mummy’s wrapping.
Place 2 peas on this to resemble eyes.
