Ghoulish Hot Pepper

Ingredients

  • Jalapenos – 6 small ones
  • Hot chili sauce – 1 tbsp
  • Pie crust – 1 sheet
  • Frozen peas thawed – 24 pieces
  • Red pepper roasted and chopped – 1 tbsp.
  • Cheddar cheese grated – 2 oz
  • Cream Cheese at room temperature – 4 oz.

Method

Pre-heat the oven to 375-degree F. Prepare a baking tray by layering a parchment paper.

In a mixing bowl, mix the cream cheese, cheddar, scallion, and hot sauce well. Transfer this into a piping bag.

Halve the jalapenos lengthwise. Remove the seeds. Pipe the cheese mixture into these chilies.

Now cut the pie crust into 1/4 inch strips. Wrap two strips around the filled jalapeno half to make a mummy-like pattern.

Transfer this to the prepared baking tray and bake until its golden brown for 15 to 20 minutes.

Allow the mummies to cool and then plate them. Use the peas and pepper bits to create a pair of eyes on them.

Cheese Balls With Tortilla wings

Ingredients

  • Tortillas – 4
  • Cheetos finely crushed – 2 cups
  • Black sesame seeds – 2 tbsp.
  • Poppy seeds – 2 tbsp.
  • Goat cheese – 4 Oz
  • Cream cheese room temperature – 8 Oz
  • Black pepper as per your taste
  • black and green olives

Method

Pre-heat oven to 375-degree F.

Cut 24 wings from tortillas.  Be creative and cut the wings similar to bat wings. Place them on a baking sheet and bake for 15 minutes.

Place the Cheetos crumbs and the sesame seeds in two different bowls.

In a mixing bowl, mix the goat cheese, pepper and cream cheese. Using a cookie scoop, scoop out balls of cheese and gently mold them with your hands.

Roll these balls in the Cheetos crumbs and seeds. Place them on a prepared baking sheet and refrigerate them.

When you are ready to serve, gently press the tortilla wings on to the sides of each cheese ball. Finely slice the olives and place them on the top to resemble the eyes.

Monster Fingers

Ingredients

  •  Bread stick dough – 2 cans
  • Food color – Orange, yellow and green
  •  Egg white – 1
  • Almonds – 60
  • Poppy seeds – 1 tbsp.

Method

Pre-heat the oven at 375-degree F. Prepare two large baking tray by lining it with parchment paper.

Unroll 1 can bread stick dough and roll it into 10 to 12″ long ropes. Transfer it into the prepared baking tray.

Gently spray the colors on the rolls. Lightly brush with egg white. Sprinkle with poppy seeds. Press an almond onto each of the roll to resemble a fingernail.

Bake for 13-15 minutes.

Cool it and serve with any dips.

Method

In a pitcher, add the grape juice, ice cream. Using an immersion blender to make it into a smoothie.

Before serving add the lemon soda and stir well.

Pour into the serving glasses and top them with small scoop of ice cream and sprinkles.

Bandaged Toes

  • Pie Crusts – 1 box
  • Beef cocktail franks -1 package
  • Almond slices – 36
  • Egg – 1
  • Ketchup for serving

Method

Pre-heat the oven to 450-degree F. Prepare a baking sheet with non-stick foil.

Using the pizza cutter, cut the pie crust into 3/8″ strips.

Wrap each frank with the dough to look like a bandage. Arrange it on baking tray.

Using a small paring knife, make a horizontal slit on the end that is unwrapped. Insert an almond slice to resemble a toenail. Brush dough bandages with egg wash.

Bake for 10 minutes or until the bandage pastry is golden brown.

Serve with ketchup.

Jack-o’-Lantern Sandwich

Ingredients

  • Pie crusts – 1 box
  • Thinly sliced ham – 8 oz
  • Sliced Cheddar – 8 oz
  • Egg – 1

Method

Preheat the oven at 425-degree F. Prepare the baking tray with non-stick foil.

Unroll the pie crusts and cut each crust into 24 pumpkin shapes with a cookie cutter.

Using a round cutter, cut 24 rounds from the sliced ham and cheddar slices.

Place two slices of cheddar in the center of the 12 slices of pumpkins. Top the cheese with 2 slices of ham. Brush the edges of the pie crust with beaten egg.

Top the 12 pumpkins with the other pumpkin slices with the cut-out faces down and carefully press on the edges to seal.

Place on the baking tray. Brush tops with beaten egg and bake for 15 minutes until light golden color.

  • Onion chopped – 1
  • Garlic cloves – 6
  • Sea salt – 1/2 tsp
  • Cinnamon – 1/2 tsp
  • Nutmeg – 1/2 tsp
  • Cloves – 1/2 tsp
  • Black pepper – as per taste
  • Vegetable broth – 4 cups
  • heavy cream – 1/2 cup
  • Honey – 2 tbsp

Method

 Preheat the oven to 425 degrees F. Line the baking tray with parchment paper.

Halve the pumpkin and scoop out the seeds. Now cut the pumpkin into quarters. Apply around 1 tbsp of olive oil on the flesh of the gourd and roast the pumpkin for 35 minutes. That’s till the flesh can be easily pierced with the fork.

In a heavy bottomed pot add the remaining olive oil and sauté the onion, garlic and salt. Stir for 10 minutes until the onions are translucent.

Now add the flesh of the roasted pumpkin, cayenne pepper, nutmeg, cloves and black pepper. Use the back of the spoon to smash pumpkin pieces. Add the broth and allow the mixture to boil. Reduce the heat and simmer for 20 minutes.

Once the squash is well cooked, add the cream, and honey. Remove from the heat and allow it to cool. Use an immersion blender to puree the mixture.

Use the scooped out flesh of the pumpkin you use for carving this Halloween day to make this yummylicious soup.

Method

In a food processor, combine the first 8 ingredients. Spoon the mixture into cupcake liners in mini cupcake baking tray.

Top it with a couple of chocolate chips.

Bake at 300-degree F for 20 minutes.

Cool and then chill for at least 2 hours.

Carrot Eye Balls

  • Carrots – 3 large
  • Cream cheese or cottage cheese – 1/4 cup
  • Pitted and sliced black olives – 1/2 cup

Method

Peel, wash and cut the carrots into chunks. Place them upright.

Place 1/2 teaspoon cream cheese on the top.

Top the cheese with olive slice.

Place the eyeballs on a platter.

Ingredients

  • Low-fat mozzarella cheese sticks – 5
  • Low fast cheese cream – 2 tbsp.
  • Green bell pepper – sliced and shaped like 10″ finger nails.

Method

Slice the cheese sticks into half. Use a knife and make slight wedges on the cheese. It should resemble the folds of the finger and knuckle.

On the tip, slice out 1/4 inch of the mozzarella cheese.

Place some cream cheese in the 1/4″ hole. Over it place the green pepper nail. Repeat it for all the cheese sticks.

Instead of green bell pepper, you can also use red or yellows ones too.

Directions

In a large mixing bowl, combine popcorn and chocolate chips. In a small saucepan, mix honey and peanut butter over a medium high heat until the peanut butter bubbles.

Dip your hands in an bowl of iced-water and roll popcorn into 2-inch balls.

Method

Pre-heat the oven to 325 Degree F. Prepare the muffin tray.

Melt the chocolate chips and butter in a medium bowl in the microwave on high for 45 to 60 seconds

Using a whisk, blend the mixture well. Stir in the prune puree, instant coffee, vanilla and brown sugar. Whisk well so the mixture is smooth and silky.

Add the beaten egg, cocoa powder, baking powder, and flour subsequently. Mix well after each addition.

Spoon 2 tbsp. of batter evenly into the muffin tray. Bake for 10-12 minutes.

Cook the pan on the wire rack for 5 to 10 minutes.

Pumpkin Muffins

Ingredients

  1. Spice cake mix – 1 box
  2. Pumpkin Puree – 1 ounce

Method

Preheat the oven to 350 Degree F. Prepare the muffin tray.

In a mixing bowl, add the cake mixture and the pumpkin puree and mix well. Do not add water, oil or eggs.

Divide the batter evenly in the muffin tray. Bake for 13 to 15 minutes.

Two Simply Delicious Halloween Cookies

  1. Black Cat Cookies

Ingredients

  • Unsalted butter softened – 2 sticks
  • Cocoa powder – 1/2 cup
  • Espresso powder – 1 tsp
  • Sugar – 3/4 cup
  • Salt – 1/2 tsp
  • Egg yolks – 2
  • Vanilla extract – 2 tsp
  • All-purpose flour – 2 cups
  • White chocolate melted – 1/4 cup

Method

In a small pan, over low heat, melt 3 tbsp. of butter and stir in cocoa powder. Stir continuously till they are well combined. Allow them to cool.

In a mixing bowl, beat together, the remaining butter, sugar, salt, espresso powder and the cooled cocoa sauce. Mix well using a whisk for a minute or 2. Add the yolks and vanilla extract and beat well.

Add the flour in three batches. Ensure that each batch is mixed well before adding the next. Mix well until you get a loose and soft dough.

Divide the dough into 2 halves and place each portion between 2 sets of parchment paper and refrigerate for an hour to make the dough firm.

Roll out each halve between parchment paper just over 1/8″ thickness.

Peel the top parchment and using a cat-shaped cookie cutter stamp out the cat cookies.

Transfer these to the baking tray spaced 1″ apart and bake for 10 to 12 minutes.

Transfer it to the wire rack to cool before decorating with white chocolate.

Preheat the oven to 375-degree F.

2. Oreo Spooky Spin

  • Semi-sweet chocolate, chopped – 1/4 pound
  • white chocolate chopped – 1/4 pound

  • Eggs hard boiled and shelled – 12
  • Sweet pickle – 1 tbsp
  • Mayonnaise – 1 tbsp

  • Green food coloring – 2 drops
  • Sliced black olives – 1 can

Method

Slice the egg in half lengthwise.

Spoon this filling into the egg whites. Use a spoon to level the filling. Place an olive slice on each yolk mixture to resemble the center of the eye.

Ingredients

  • Boiled yellow potatoes – 3/4 pounds
  • Eggs – 2
  • Ketchup – 2 tbsp.
  • Worcestershire  sauce – 2 tsp
  • Plain bread crumbs – 1/2 cup
  • garlic -2 cloves
  • Carrot – 1
  • Ground beef – 3/4 lb
  • Ground pork – 1/2 lb
  • Cherry tomatoes – 12
  • Low fat sour cream – 3/4 cup
  • peas – 1 cup
  • Salt and pepper to taste

Method

Heat the oven to 375-degree F and line the muffin tin with foil liners.

In a mixing bowl, combine eggs, Worcestershire, ketchup, salt and pepper and beat well. Now stir in the bread crumbs. Add carrot and garlic and mix well.

Stir in the beef and pork and mix well to combine.

Divide the meat mixture among the muffin mold.

Place a tomato in the center of the meat mixture.

Bake for 15 to 17 minutes.

Mash the potato with sour cream and salt till it’s very smooth.  Transfer it into a pastry bag and fit it with a 1/2 inc ribbon tip.

Pipe the potatoes back and forth over each meat pies to resemble a mummy’s wrapping.

Place 2 peas on this to resemble eyes.

  • Orange flavored jelly crystals – 1 packet
  • Condensed milk – 1 tin

Method

In a small bowl, pour 3/4 cup of boiling water. Add lemon crystals and stir until dissolved. In a measuring cup pour 1 cup vodka, add enough ice to make 1 1/4 cup and shake well. Stir this mixture into lemon gelatin. Remove the un-melted ice. Pour the mixture into tall shot glasses 1/3 of the way.

Refrigerate this mixture for 90 minutes.

Follow the above procedure to make orange gelatin mixture with the remaining water and vodka. And pour this over the lemon mixture.

Refrigerate it till the orange gelatin is set.

In a medium-sized bowl, add the unflavored gelatin to the warm water and stir till it is dissolved. To this pour the sweetened condensed milk and rum.

Pour this over the orange gelatin layer.

Refrigerate it for at least 30 minutes.

Apple and Cranberry Halloween Cocktail  Martini

This is a perfect Halloween drink as it contains two of the summer fruits preserved for Fall.

Ingredients

  • Vanilla Vodka – 1 ounce
  • Sour apple schnapps – 1 ounce
  • Butterscotch schnapps – 1 ounce
  • Cranberry juice – 1 ounce

Directions

Pour the above ingredients into a cocktail shaker over ice. Cover and shake well until the outside of the shaker is frosted. Strain into a martini glass and garnish with a cherry before serving.

In a cocktail shaker, add ice cubes and pour all the fluids over it. Shake well until the shaker is frosted. Ensure to slowly let the carbonated air out of the shaker a couple of times during the shaking process. Strain the fluid and serve in the martini glasses. Garnish a with apple slice.

Ingredients

  • Apple juice – 1 bottle
  • oranges – 2
  • cinnamon stick – 1
  • cloves – 8
  • ground nutmeg – 1/4 tsp
  • honey – 1/4 cup
  • lemon juice – 3 tbsp.
  • pineapple juice – 2 1/4 cups

Method

Preheat the oven to 350 degrees F. Stud the oranges whole with cloves and bake for half an hour.

In a thick-bottom pan, combine the apple juice and cinnamon stick and bring it to boil. Reduce the heat to medium and again simmer for 5-10 minutes.

Remove the pan from the heat and add honey, lemon juice, pineapple juice and nutmeg.

Now pour the liquid into the punch bowl and gently lower the clove studded baked oranges into it. Serve hot.
