Prepare the grill pan by cleaning and heating it to medium. Just before grilling, add oil.

In a small mixing bowl, mix salt, pepper, mayonnaise and paprika. Spread the mixture beneath the skin of  the chicken. Apply 1 tbsp. of oil in the chicken and place it on the grill with the skin side down. Cover and grill until the skin is crisp and browned or for 12 to 15 minutes per side.

While the chicken is, grilling toss the peaches with shallot, cucumber, thyme, and vinegar in a large salad bowl. To this add salt and pepper as well as the remaining olive oil.

Serve the chicken with cucumber and peach salad.

  • Bow tie pasta or pasta of your choice – 8 ounce
  • Cucumber – 1 large one finely sliced
  • Onion – 1 finely sliced
  • Dried dill – 1 1/2 tsp
  • White vinegar – 3/4 cup
  • White sugar – 1 cup
  • Water – 1 cup
  • Vegetable oil – 1 tsp
  • Mustard sauce – 1 tsp
  • Salt – 1/2 tsp
  • Ground black pepper – 1/2 tsp


Cook the pasta following the instruction given in the package, and allow it to cool.

In a large salad bowl, toss pasta, cucumber, onion, and dill. In another bowl whisk the remaining ingredients well until the sugar is well dissolved.

Pour the dressing over the mixture and toss lightly once more so the dressing well coated. Chill until it’s time to serve.
