- Aubergine – 1kg
- Olive Oil – 100ml
- Red wine vinegar – 5tbsps
- Sugar – 1tbsp
- Garlic – 4 cloves thinly sliced
- Mint – One bunch roughly chopped
- Parsley – One bunch roughly chopped
